Rolled Icing
What is Rolled Icing?
Rolled icing is just that. It is mostly a combinition of sugar, glucose, gylcerine, gelatine, and flavorings. It is warmed, mixed and kneaded until soft and pliable. Rolled fondant, as it is usually called,  must  then be wrapped tightly in plastic wrap and then set at least overnight to cure.  When ready it is then kneaded again, to the correct texture. Finally it is ready for the cake. Your cake is filled and then covered with a thin layer of icing or ganache .The  fondant is then rolled out on a surface dusted with cornstarch.  The circle must be at least 8 inches wider than the cake to insure that the sides are covered. The fondant is placed on the top and  worked down the sides of the cake being careful to keep it smooth . It is then trimmed and finally ready for decorations.
So next time someone askes why rolled icing costs more, you will know!
This rolled icing was tinted pink then quilted and a silver sugar bow along with silver dragees were added
This rolled icing cake is adorned with dark chocolate roses and designs.
Rolled icing can also be elegantly draped for a different effect
This design is wacky yet elegant. We have sugar paste flowers,  pearl colored bows and edible 24k gold on this fun cake.
This is my version of the  "Quake Cake" which  was  orginally designed by Collette Peters of New York
Once again edible 24k gold is used . This time it is painted on the edges of the piped roses. The rolled fondant is also used to make a lattice effect on the cake.
