What is a Sugar Paste Flower?
In the last few years sugar flowers called "gum" paste flowers have become more popular for wedding cakes. The difference between a piped flower and a gum paste one is that a piped rose is made to resemble a rose while a sugar paste flower is made to look exactly like a rose or as close as we can get. "Gum" or Sugar Paste flowers are much more expensive because of the time and care involved in making them.
First a putty like sugar dough is made. It is the rolled out to paper thinness and cut with special cutter for each flower. The edges a softened and veined and then the flower is put together usually one petal at a time. After being  shaped and dried the flower is then dusted with edible colored dust. It is then steamed to set in the color and give it a realilstic glow.
The flowers can be arranged on the to of your cake or the sides, whereever you wish!  I can even make sugar rose petals to place around the cake.
These arrangements can be saved easily after the wedding by placing them in a china cabinet or a glass display case..
The arrangements on these cakes are made entirely of gum paste flowers. If  kept from humidy these can be saved and displayed for years to come.
Gum paste peonies, edible ribbons and lace decorate this rolled icing cake.
    This cake was picked up by the grooms father and transported in a specially made box.  It successfully made it all the way to Springfield for a Sunday wedding.
